Peach Quick Bread

Makes 16 servings

Ingredients:

1 1/2 cups white wheat flour
3/4 cup whole wheat flour
1/4 cup toasted wheat germ
3/4 cup white granulated sugar
3/4 cup Splenda, no calorie sweetner
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup plain nonfat greek yogurt
1 whole egg
2 egg whites
2 tablespoons canola oil
1 teaspoon almond extract
1 cup fresh or frozen peaches (cut into small chunks)

Directions:

Preheat oven to 350 degrees
Spray non-stick coating on loaf pan.
In a large bowl, combine all dry ingredients.
In another bowl, combine all wet ingredients, except peaches.
Make a well in the dry ingredients, pour in wet mixture
and stir just until combined.  Do not overmix.
Fold in peaches.  Spoon batter into loaf pan, smoothing top.
Bake about 55 min to 1 hr,  in 350 degree oven,
until toothpick inserted in center comes out clean.
Cool in pan on rack for 10 minutes, then turn out onto rack to cool completely.
Cut into 16 equal pieces.  One piece equals one slice or one serving.

One Serving = 1/16 of recipe
