Ingredients: 1/2 Avocado, cut into cubes. 3 oz Shrimp cooked & chilled 2 tablespoons green onions (scallions), sliced or chopped 2 cups romaine lettuce cut or torn into pieces 2 tablespoons salad dressing, light balsamic vinaigrette (Newman's Own)
Directions:
Put shrimp into small mixing bowl. Seed avocado, peel and dice one-half avocado, and put into bowl. Add sliced green onions (scallions) Pour on dressing and stir to coat all ingredients. Let it sit while getting lettuce ready. Place lettuce in a salad bowl. Stir shrimp mixture again to get up any dressing that settled on bottom of bowl, and spoon it onto the bed of lettuce.
