1/2 cup Low-Fat Ricotta cheese 1 tsp Almond Extract 2 pkg Splenda 1 1/2 tsp mini-chocolate chips 1 1/2 tsp sliced almonds.
Directions:
Mix all ingredients together in a small bowl.

3 large leaves of lettuce (Bibb, Boston, Iceburg, Romaine etc.) 3 slices smoked Turkey Breast (Oscar Mayer 3 slices = 60 calories) 1 TB light Mayonnaise 1 TB prepared mustard
Spread lettuce leaves with mayo and mustard Top with 1 slice of turkey lunchmeat Roll up together and pierce with toothpick to hold together. Repeat with the other two lettuce leaves and turkey slices.

Makes 30 Cookies
1/4 cup Butter 1/4 cup Peanut Butter 1/4 cup white granulated Sugar 1/4 cup brown Sugar, packed 1/2 cup granulated Splenda 1 egg 1/2 tsp Vanilla extract 1/2 cup Flour (white or whole wheat) 1/4 cup Oatmeal, dry, uncooked 1/2 tsp Baking soda 1/4 tsp salt (optional) 1/4 cup Grape-Nuts cereal, dry Directions:
Prehead oven to 350 degrees. Spray non-stick coating on cookie sheet.
In mixing bow, cream the butter, peanut butter, sugars and Splenda. Beat in egg and vanilla. Combine flour, oats, baking soda and salt in a separate bowl. Gradually add to creamed mixture and mix well. Stir in Grape-Nuts.
Drop 30 small rounded teaspoons 3 inches apart onto cookie sheet. Bake at 350 degrees for 9 minutes or until lightly browned. Makes 30 cookies.
