Almond Chocolate-Chip Ricotta

Makes 1 serving

Ingredients:

1/2 cup Low-Fat Ricotta cheese
1 tsp Almond Extract
2 pkg Splenda
1  1/2 tsp mini-chocolate chips
1  1/2 tsp sliced almonds.

Directions:

Mix all ingredients together in a small bowl.

1 serving is:

Calories: 145
Carbs: 12 grams
Protein 13 grams


 


Turkey Roll-ups

Makes 1 servings

Ingredients:

3 large  leaves of lettuce (Bibb, Boston, Iceburg, Romaine etc.)
3 slices smoked Turkey Breast (Oscar Mayer 3 slices = 60 calories)
1 TB light Mayonnaise
1 TB prepared mustard

Directions:

Spread lettuce leaves with mayo and mustard
Top with 1 slice of turkey lunchmeat
Roll up together and pierce with toothpick to hold together.
Repeat with the other two lettuce leaves and turkey slices.

1 serving is:

Calories: 115
Carbs: 4.8 grams
Protein 10.8 grams

1/2 cup dry Golean cereal
Calories 70; Carbs 15 grams; Protein 6.5 grams.



Granola Bar
1 Healthy Choice Toasted Almond Bar (1/2 package)
Calories 95; Carbs 14.5 grams; Protein 2 grams.



Atkins Bars
1/2 various Atkins bars (1/2 of the packaged bar)
Calories 90; Net Carbs 4 to 6 grams; Protein 2 to 5 grams.



Kind Bar

1/2 of a Nut Delight Kind bar (1/2 of the packaged bar)
Calories 100; Carbs 6 grams; Protein 3.5 grams.



Dried Fruit and Nuts
2 TB Kirkland Fruit and Nuts (from Costco)
Calories 100; Carbs 10 grams; Protein 2.7 grams.


Almonds
1 one-hundred-calorie package of raw almonds

Peanut Butter Crunch Cookies

Makes 30 Cookies

Ingredients:

1/4 cup Butter
1/4 cup Peanut Butter
1/4 cup white granulated Sugar
1/4 cup brown Sugar, packed
1/2 cup granulated Splenda
1 egg
1/2 tsp Vanilla extract
1/2 cup Flour (white or whole wheat)
1/4 cup Oatmeal, dry, uncooked
1/2 tsp Baking soda
1/4 tsp salt (optional)
1/4 cup Grape-Nuts cereal, dry

Directions:

Prehead oven to 350 degrees.
Spray non-stick coating on cookie sheet.

In mixing bow, cream the butter, peanut butter, sugars and Splenda.
Beat in egg and vanilla.

Combine flour, oats, baking soda and salt in a separate bowl.
Gradually add to creamed mixture and mix well.
Stir in Grape-Nuts.

Drop 30 small rounded teaspoons 3 inches apart onto cookie sheet.
Bake at 350 degrees for 9 minutes or until lightly browned.
Makes 30 cookies.

One serving= 1 cookie:

Calories: 56
Carbs 6.9 grams
Protein 1.2 grams
