Peanut Butter Crunch Cookies - POSTED ON: Apr 01, 2011
Makes 30 Cookies
Ingredients:
1/4 cup Butter 1/4 cup Peanut Butter 1/4 cup white granulated Sugar 1/4 cup brown Sugar, packed 1/2 cup granulated Splenda 1 egg 1/2 tsp Vanilla extract 1/2 cup Flour (white or whole wheat) 1/4 cup Oatmeal, dry, uncooked 1/2 tsp Baking soda 1/4 tsp salt (optional) 1/4 cup Grape-Nuts cereal, dry Directions:
Prehead oven to 350 degrees. Spray non-stick coating on cookie sheet.
In mixing bow, cream the butter, peanut butter, sugars and Splenda. Beat in egg and vanilla. Combine flour, oats, baking soda and salt in a separate bowl. Gradually add to creamed mixture and mix well. Stir in Grape-Nuts.
Drop 30 small rounded teaspoons 3 inches apart onto cookie sheet. Bake at 350 degrees for 9 minutes or until lightly browned. Makes 30 cookies.

1 slice whole wheat bread 1 and 1/2 oz Tuna packed in water 1 oz sliced cheddar cheese
Directions:
Toast bread. Heat tuna in microwave about 15 -20 seconds Put tuna on top of toast Top with sliced cheese Put in microwave for about 30 seconds until cheese melts.
