Sharing something with you. My sister-in-law recently re-wrote this old fable and posted it on Facebook.
One day a farmer's donkey fell down into a well. The animal hew-hawed for hours as the farmer tried to figure out what to do. Finally, he decided the animal was old and would surely die down there. And the well needed to be covered up anyway; it just wasn't worth it to retrieve the donkey. Even if it were, he wasn’t sure how he would go about it. So he invited his neighbors to come help him bury the donkey. They all grabbed a shovel and began to shovel dirt into the well. At first, the donkey kept on crying. A few shovel loads later, the group noticed the donkey shaking the dirt off and taking a step up. As the farmer’s neighbors hurried to shovel dirt on top of the animal, he shook it off and took another step up. Pretty soon, the donkey stepped up on the edge of the well and trotted off. MORAL: It’s not what happens to you that matters, but what you do with what happens to you.

Creamy Crab Salad - POSTED ON: Oct 10, 2011
Makes 2 servings
Ingredients:
2/3 cup lump crabmeat (1 small can) 2 tablespoons light mayonnaise 2 tablespoons whipped cream cheese 2 tablespoons sour cream 1/4 cup raw chopped celery 2 tablespoons raw chopped onions 2 tablespoons chopped green onions 2 tablespoons chopped red bell peppers salt and pepper to taste
Directions:
Drain can of crabmeat chop celery, sweet onion, green onion, bell pepper Spray nonstick coating on small skillet, cook chopped sweet onion over high heat for about 1 minute, until browned. Remove from heat and set aside. In medium bowl, combine sour cream, mayo and cream cheese. Whisk until smooth. Add salt and pepper (can also add dash of cayenne or red pepper if desired) Add browned onion, chopped celery, sliced green onions, chopped bell pepper, stirring until mixed well. Gently stir in 1 can of rinsed and drained lumb crabmeat. Refrigerate for at least 1 hr to allow flavors to comgine. One Serving = 1/2 of recipe Calories: 239 Net Carbs 7 grams Protein 21 grams

Makes 16 servings
1 1/2 cups white wheat flour 3/4 cup whole wheat flour 1/4 cup toasted wheat germ 3/4 cup white granulated sugar 3/4 cup Splenda, no calorie sweetner 1 teaspoon baking soda 1/2 teaspoon salt 1/2 cup plain nonfat greek yogurt 1 whole egg 2 egg whites 2 tablespoons canola oil 1 teaspoon almond extract 1 cup fresh or frozen peaches (cut into small chunks)
Preheat oven to 350 degrees Spray non-stick coating on loaf pan. In a large bowl, combine all dry ingredients. In another bowl, combine all wet ingredients, except peaches. Make a well in the dry ingredients, pour in wet mixture and stir just until combined. Do not overmix. Fold in peaches. Spoon batter into loaf pan, smoothing top. Bake about 55 min to 1 hr, in 350 degree oven, until toothpick inserted in center comes out clean. Cool in pan on rack for 10 minutes, then turn out onto rack to cool completely. Cut into 16 equal pieces. One piece equals one slice or one serving.

Many Diet Gurus are very clever. BUT Cleverness is not Wisdom.
Clever = cleverness: 1. mentally bright; having sharp or quick intelligence; able. 2. superficially skillful, witty, or original in character or construction; facile: It was an amusing, clever play, but of no lasting value. 3. showing inventiveness or originality; ingenious: His clever device was the first to solve the problem.
Wise = wisdom 1. having the power of discerning and judging properly as to what is true or right; possessing discernment, judgment, or discretion. 2. characterized by or showing such power; judicious or prudent: a wise decision. 3. possessed of or characterized by scholarly knowledge or learning; learned; erudite: wise in the law. 4. having knowledge or information as to facts, circumstances, etc.: We are wiser for their explanations.

2 cooked egg whites 1/4 cup raw chopped celery 1/4 cup sweet bell peppers (green or red) 1/4 cup raw chopped onions 1 tablespoon dill or sugar/free pickle relish 3 Tablespoons light Mayonnaise 1 Tablespoon Dijon Mustard 1 teaspoon lime juice (unsweetened) 1/2 teaspoon lemon juice (unsweetened) 1/8 teaspoon salt 1/8 teaspoon black pepper
Hard boil 6 eggs, remove yoke and store away, chill and chop egg whites. Place chopped red onioin in small microwaveable bowl with 1 tablespoon water. Cover and microwave for 90 seconds. Once bowl is cool enough to handle, drain water and allow onion to cool completely. In another small bowl, combine mayo, mustard, lime and lemon juice, salt and pepper, stirring until well mixed. Once onion has completely cooled, add eggwhites, bell peppers, and celery, then stir. Next Add mayo mixture and stir until thoroughly mixed. Makes 2 Servings
