Here it is, Saturday AFTER Thanksgiving. I just made a special big dinner for my husband and...frankly...I am exhausted, and heading to my room for an afternoon nap.

Chicken Rice Dinner - POSTED ON: Nov 22, 2011
Makes 6 servings
Ingredients:
1 1/2 cups rice (white uncooked) 1 can cream of chicken soup (12 oz) 12 oz water 1/2 cup mushrooms (4 oz can drained) 1 pkg onion soup mix (Lipton) 6 chicken thighs (skinless, boneless) Directions:
Spray coat rectangular baking pan Pre-heat oven to 325 degees. Stir together soup and water, add mushrooms, then add rice. Pour into pan and spread out mixture evenly. Place raw chicken thighs on top of rice mixture. Sprinkle dry onion soup mix over all. Cover tightly with aluminum foil. Bake in 325 degree oven for 2 hours. (a bit longer is also okay) Makes Six Servings 1 Serving = Calories: 343 Net Carbs 43 Protein 18.8 grams

Makes 12 servings
16 oz ground beef, raw 2 tablespoons light olive oil 2 onions, chopped very finely 2 green peppers, chopped vey finely 1 garlic clove, chopped very finely 1/8 teaspoon salt 1/8 teaspoon black pepper 1 can tomato paste (6 oz can) 1 can tomato sauce (8 oz can) 1 can peeled ready-cut tomatoes (15 oz can) 1 can whole corn (15 oz can) 1 can whole balck olives (15 oz can) 6 oz dry noodles - cooked in boiling water 8 oz shredded cheddar cheese Directions:
Preheat oven to 350 degrees. Spray coat a rectangular baking pan and set aside. Spray coat a large deep skillet or dutch oven with non-stick coating. Brown ground beef in oil in pan, stirring to crumble. Add onion, green pepper, garlic, salt and pepper. Cook over medium heat 10 mintues, stirring frequently. Stir in tomato paste, tomato sauce, and canned tomatoes, cook 15 minutes. Add corn and drained olives, stirring well. Remove from heat, gently stir in cooked and drained noodles. Spoon mixture into rectangular baking pan. Sprinkle cheese evenly over all, and bake, uncovered at 350 degrees for 45 minutes or until hot and bubbly. Makes Twelve Servings 1 serving = Calories: 341 Carbs 18 grams Protein 14.6 grams

3 raw eggs 3 ounces cream cheese (not softened) 1 teaspoon cream of tarter Directions:
Preheat oven to 300 degrees Separate the eggs. Use mixer with clean bowl and clean beaters to whip egg whites and cream of tarter until stiff. Use mixer and separate bowl to combine egg yolks and cream cheese. Using a long thin spoon or spatula, gradually fold the egg yolk mixture into the egg white mixture, a little bit at a time, being careful not to break down the whites. Spray nonstick coating on a cookie sheet, and spoon the mixture onto the sheet, making 6 mounds. Flatten each mound slightly. Bake about 30 minutes in 300 degree oven. They should come out slightly soft, not crumbly. Let cool on the pan for a few minutes, and then remove to a rack and allow them to cool. Store in a loosely open sack and allow to rest on the counter before use (otherwise they might be too moist) They can be individually wrapped and frozen. Makes Six Servings, One/sixth = 1 serving Calories: 89 Net Carbs 0.7 grams Protein 4.6 grams
Repairs - POSTED ON: Nov 03, 2011
This morning my house is awry, with two workman ripping away and replacing sheetrock in the walls that were cut open for the plumbing reroute a few weeks ago. They are working in the garage, the kitchen, both bathrooms and the master bedroom
I have barracaded myself and my cat, Boodie, in my living room where we will hole up until evening today, and then again all day tomorrow. Next week, the workmen will return to remove everything from my masterbedroom, prep it for painting, and then paint, and hopefully, return the large pieces of furniture to their appropriate places. Since for one night next week we will have no bed, my husband plans to sleep on the day bed in his study, and the Boodie and I will sleep on the couch here in the living room.
I am finding it difficult to accomplish much in this disarry, so my posts here will be spotty. However, I have been following my food plan, and maintaining my weight-loss, instead of using it as an excuse to binge or overeat. Life happens. Maintaining a positive dieting lifestyle means we do what we need to do, no matter what is happening around us. It is simple.....but NOT easy.
