Diet French Toast

Makes 1 serving

Ingredients:

1 egg
1 teaspoon vanilla extract
1/4 teaspoon cinnamon
2 packages Splenda
1 slice wheat bread
1 tablespoon milk

Directions:

Spray skillet with non-stick coating,
and place over medium-high heat
Slightly toast or dry out bread
Mix liquid together
Soak dry bread in liquid mixture
Grill bread in hot skillet
If desired, Sprinkle another package of Splenda
and cinnamon over top and eat.

Makes1 Serving.=

Pineapple Coconut Cake

Makes 15 servings 

Ingredients:

1 yellow cake mix, prepared per package instructions
1 can pineapple, crushed, canned in own juice (20 oz ) undrained
1 cup granulated sugar
1 4oz package of instant vanilla pudding, prepared per package instructions
8 oz container Cool Whip, thawed
1 cup dried Coconut, flaked or shredded

Directions:

Preheat oven to 350 degrees.
Spray non-stick coating on a rectangular baking pan
Prepare cake mix as directed on package.  Pour into prepared pan,
Bake 30 to 35 minutes in 350 degree oven
While cake is aking, combine pineapple and sugar in saucepan.
Bring to a rolling boil over medium-high heat, stirring constantly.
Remove from heat and allow to cool slightly.
Remove cake from oven, and pierce holes in cake with a fork.
Pour pineapple mixture over warm cake.
Prepare instant pudding mixture according to package directions.
Before pudding totally sets up, spread over warm cake,
and refrigerate until thoroughly chilled. 
Before serving, cover top of cake with Cool Whip,
and sprinkle with toasted coconut.
Cut 5 x 3 for 15 pieces.

TO Toast Coconut:  Spread in a thin layer on a cookie sheet.
Place in a 350 degree oven.
Watch very closely, because once it begins to brown, it can burn quickly.
Stir as often as needed to ensure it browns evenly.
Cool coconut before placing on topping.

Chocolate Chip Cookies

Makes 36 servings  (3 dozen cookies)

Ingredients:

2 1/2 cups white wheat flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup brown sugar
1/2 cup white granulated sugar
1 cup butter (room temperature)
2 eggs
2 teaspoons vanilla extract
2 cups chocolate chips
1 cup chopped walnuts

Directions:

Preheat oven to 300 degrees.
Spray non-stick coating on a cookie sheet.
In a medium bowl, combine flour, soda and salt.  
Mix well with wire whisk.  Set aside.
In a large bowl with an electric mixer, blend sugars at medium speed.
Add butter and mix to form a grainy paste, scraping down the sides of the bowl.
Add eggs and vanilla extract, and mix at medium speed until just blended.
Do not overmix.
Drop by rounded teaspoons onto a cookie sheet. (36 cookies)
Bake 19 to 21 minutes or until golden brown.
Transfer cookies immediately to a cool surface with a spatula.

Makes 36 Cookies.

Accepting Responsibility

I spent the past hour writing a long article about
how accepting Responsibility for one's behavior choices
applies to us in relation to weight-loss issues.

However, my MacBook Air computer crashed and I lost the article.
I want to BLAME it for this brief article,
but the truth is that I am choosing not to take the additional time
to re-write it.  I'm just not in the mood to make the effort.

This is the what frequently happens to us in our dieting efforts. 


Meal in a Dish

Makes 8 servings

Ingredients:

1  lb of lean ground beef
1 medium onion, chopped
1  can of cream of chicken soup, 10 oz
1  can of cut green beans, 14 oz
2 cups of mashed potatoes
2 tablespoons butter ( use only 1 TB if posible)

Directions:

Preheat oven to 350 degrees.
Spray coat an oven proof baking pan with non-stick coating.
Spray coat a large skillet with non-stick coating.
Saute ground beef with chopped onions, until cooked and brown
Mix in canned soup
Pour ground beef, onion, soup mixture into baking pan
Top with green beans
Top with mashed potatoes
Put small pats of butter on top of potatoes
Bake in 350 degree oven for about 30 minutes.

Serves 8

Carbs: 15
Protein : 12.4
