Chicken Waldorf Salad

 Makes 1 servings

Ingredients:

2 oz roasted skinless chicken
2 Tablespoons raw chopped celery
1/4 cup raw chopped apple
1 Tablespoon chopped walnuts
1 Tablespoon light Mayonnaise


Directions:

Cube chicken,
chop celery and apple into medium sized pieces
chop walnuts
Combine all ingredients
Cover and chill before serving.

1 serving has:

Calories: 193
Carbs: 6 grams
Protein: 18.8 grams

There is a small typo in the recipe- 12 oz of chicken as opposed to 2 oz. I am sure your arm hinders the typing process and hope your healing is going well. How do you think low fat mayo compares to full fat? I have never tried a lighter version. What a beautiful summer treat:-)!

             Thanks Karen for pointing out the typo so I could correct it. Re the low-fat mayo, years ago I switched to save calories. Didn't like the "non" fat version that had 10 calories, so moved up to the light with 35 calories. As part if the low-carb/higher-fat experiment I tried switching back to full-fat, but found that I really like the taste of the light better than full-fat. I understand that Best Foods and Hellmans are the same brand, with Best Foods being the same product on the West Coast.
