Shrimp Avocado Salad

Makes 1 serving
Ingredients:
1/2 Avocado, cut into cubes.
3 oz Shrimp cooked & chilled
2 tablespoons green onions (scallions), sliced or chopped
2 cups romaine lettuce cut or torn into pieces
2 tablespoons salad dressing, light balsamic vinaigrette (Newman's Own)
Directions:
Put shrimp into small mixing bowl.
Seed avocado, peel and dice one-half avocado,
and put into bowl.
Add sliced green onions (scallions)
Pour on dressing and stir to coat all ingredients.
Let it sit while getting lettuce ready.
Place lettuce in a salad bowl.
Stir shrimp mixture again to get up any dressing that settled
on bottom of bowl, and spoon it onto the bed of lettuce.

I'm always surprised at how much lettuce 2 cups is. You think it's going to be nothing, but when you start adding things to it, it makes a filling meal! This looks great and reminds me how much I love those frozen bags of pre-cooked shrimp! :) |
