Grandma's Goulash

Makes 12 servings

Ingredients:

16 oz ground beef, raw
2 tablespoons light olive oil
2 onions, chopped very finely
2 green peppers, chopped vey finely
1 garlic clove, chopped very finely
1/8 teaspoon salt
1/8 teaspoon black pepper
1 can tomato paste (6 oz can)
1 can tomato sauce (8 oz can)
1 can peeled ready-cut tomatoes (15 oz can)
1 can whole corn (15 oz can)
1 can whole balck olives (15 oz can)
6 oz dry noodles - cooked in boiling water
8 oz shredded cheddar cheese


Directions:

Preheat oven to 350 degrees.
Spray coat a rectangular baking pan and set aside.
Spray coat a large deep skillet or dutch oven with non-stick coating.
Brown ground beef in oil in pan, stirring to crumble.
Add onion, green pepper, garlic, salt and pepper.
Cook over medium heat 10 mintues, stirring frequently.
Stir in tomato paste, tomato sauce, and canned tomatoes, cook 15 minutes.
Add corn and drained olives, stirring well.
Remove from heat, gently stir in cooked and drained noodles.
Spoon mixture into rectangular baking pan.
Sprinkle cheese evenly over all, and bake, uncovered
at 350 degrees for 45 minutes or until hot and bubbly.
