I am in the beginning stages of a healthier eating plan. I have just today discovered your blog and videos. This recipe and the Mexican Lunch recipe are going into my meal rotations. They look delicious, filling, and are low cal. I look forward to making them. I'm loving your sweet, calming nature. You're a great inspiration. Thank you.

Thank YOU, Lisa for your very kind words. Those are two small meals that I enjoy frequently. I hope that you do too. When I'm eating one of these and want my meal to have more volume, I also add a small green salad with low-calorie dressing.
